Cauliflower Curry Soup

1 medium onion, peeled, cut in quarters

2 cloves garlic, peeled

2 teaspoons whole coriander seeds

2 tablespoons butter

2 tablespoons extra virgin olive oil

2 teaspoons kosher salt

4 cups cauliflower, cut in 1-inch florets

1 teaspoon green curry paste

2 cups vegetable broth

1/4 cup coconut milk

1 tablespoon lime juice



1   Place onion, garlic, coriander seeds, butter, olive oil, and salt in the blender pitcher.

2   Select SAUTÉ.

3   Add remaining ingredients then select SMOOTH SOUP.
